Culinary philosophy
Ultimately, it’s about pleasure and well-being. This is what the Giessbach restaurants aim to offer all their guests, far from the stress of everyday life. We believe this is achievable by producing as much as possible ourselves. We cook in harmony with nature, and it’s no coincidence that these products taste the best. Our herbs come from our own garden, the vegetables—whenever possible—from our own fields or the historic garden houses, and even the honey is produced by our bees and is available for purchase. Naturally, everything is organic. When it comes to wine, we focus on European provenance, and the water comes from our own spring.
